Cheesy Caramelised Onion & Sausage Mash Bake

Ingredients (serves 4)

For the sausage base:

  • 8 reduced-fat pork sausages

  • 2 large red onions, finely sliced

  • 1 large carrot, finely diced

  • 1 tsp chopped garlic

  • ½ tsp dried thyme

  • Salt and black pepper

  • 1 tbsp  honey

  • 1 tbsp balsamic vinegar

  • 1 tbsp Worcestershire sauce

  • 400ml beef stock

  • 2 tsp beef gravy granules (e.g. Bisto Best)

For the mash topping:

  • 800g potatoes, peeled and chopped

  • 25g lighter lurk butter spread

  • 120ml semi-skimmed milk

  • 100g reduced-fat extra mature cheddar cheese, grated


Method

  1. Add the potatoes to a large pot of cold salted water and bring to the boil.

  2. Cook for 12–15 minutes until soft. Mash with butter, milk, salt, and pepper until smooth. Set aside to cool slightly.

  3. Meanwhile, grill, air fry, or pan-fry the sausages according to the packet instructions until browned and almost cooked through.

  4. Slice the sausages into bite-sized pieces and set aside.

  5. Add the onions and carrot to a frying pan and cook over medium heat for about 10 minutes until softened and golden.

  6. Preheat the oven to 200°C (fan).

  7. Stir in the garlic and thyme, cooking for 1 minute.

  8. Add the balsamic vinegar, Worcestershire sauce, and brown sugar, and cook for 1–2 minutes to reduce slightly.

  9. Pour in the beef stock and stir through the gravy granules. Simmer for 5 minutes until slightly reduced.

  10. Once thickened, add the chopped sausages into the gravy and toss to combine.

  11. Spoon the mixture into a large baking dish and allow to cool slightly.

  12. Spread the mashed potato evenly over the sausage mixture using a fork to create texture.

  13. Sprinkle the grated cheese over the top and bake for 25–30 minutes until golden and bubbling.
