Ingredients:
400g lean turkey mince
1 onion, finely chopped
1 carrot, diced
100g cooked lentils
1 tbsp tomato purée
150ml chicken stock
400g cauliflower florets
30g light cheddar cheese
Method:
Sauté onion and carrot for 5 minutes, add turkey mince and cook until browned.
Stir in tomato purée, lentils, and stock. Simmer 10 minutes.
Steam cauliflower until soft, then mash with cheese, salt, and pepper.
Transfer mince to a baking dish, top with mash, and bake at 200°C for 15–20 minutes until golden.
